What is Matcha?

It is simply finely ground powder of green tea. The green tea plants for matcha usually grown under a protective cover for a period of 2 weeks. This is what distinguishes it from normal green tea. However, this cover plays a significant role, because it increases the amount of chlorophyll in the leaves. Furthermore, it gives matcha its unique sweet taste (umami). Once these two weeks are over, the farmers harvest, steam and dry the leaves. Finally they will process them into a fine powder that can be easily prepared.

All our products are made and produced in the Wazuka-cho Sagara-gun region, Kyoto Prefecture. The local farmers choose and then test only the highest quality leaves. Our partners comply in fact with the stringent rules of the Japanese Ministry of Agriculture, Forestry and Fisheries. In this way they can ensure the highest standards of product and safety.
